Remember the Michigan Mitten…

Katie stayed for a couple of weeks and did a great job in both the tunnel and the garden so that they were perfectly prepared for the late planting of vegetables. She painted the stables and did various jobs about the place.  She was fun to have around and we had some really good chats.  Glad to know there is a good deli to visit “Essence on Maine” Clarkson, Michigan.  Seems her whole family are involved and this is one of the recipes.

Cauliflower Crust Pizza

Ingredients:
1 medium-ish sized head of cauliflower
(or one bag of frozen cauliflower(super easy))
1/2 cup almond flour
1 egg
Big pinch of salt

Season with any/all of the following:
basil, oregano, crushed red pepper flakes, pepper

Method:
-Prepare a pan. Use either a silicone mat or parchment paper. Then grease the mat or paper with preferred choice of greasin’
-Oven 450 deg F
-Cut off florets of fresh cauliflower
-Cook (steam, boil)
– if using frozen cauliflower – pour cauliflower into microwave safe bowl and pop into microwave for 2-3 minutes. You just don’t want any frozen pieces.
-Drain any excess water off cauliflower florets
-Put cooked cauliflower into blender or food processor. Blend until smooth.
-Use a thin towel/cheese cloth – dump puréed cauliflower onto cloth. Squeeze out all water and then squeeze once more to be sure!
-put into medium sized mixing bowl
-add almond flour, egg, and desired seasonings
-Mixture should be a little sticky but not too wet!
-spread mixture onto prepared pan
-pop into oven for 15-20 mins ( should be golden all around)
(Optional but suggested) briefly take the crust out of the oven. Flip crust over. Put back in oven ~10 mins
-prepare toppings
take crust out. Top to your hearts desire. Pop back into oven to warm the toppings.
Take out of oven
Enjoy with a glass of red wine :)
