Wayne and Sheryl arrived from America and stayed a few weeks at East Reen. I went away for a weeks holiday during their stay and returned to a beautifully painted conservatory (thank you Wayne). All my cupboards in the kitchen beautifully tidied and labelled (many thanks Sheryl). They cleared and tidied too many things to mention and my life became easier because of this, the wooden model boat Wayne brought back to life is in pride of place on a window sill in the hall.
We always looked forward to Friday night Fish & Chips at the pub in Union Hall. So warm & cozy on a dark rainy night.

PUFFY APPLE POPOVER
2 Tbsp butter
2 Tbsp brown sugar
¼ tsp ground cinnamon
1 apple peeled & thinly sliced
2 large eggs
½ cup flour
½ cup milk
¼ tsp saltHeat oven to 400 F (200 C or #5 gas). Melt butter in pie plate in oven. Brush butter over bottom and side of pie tin. Sprinkle evenly with brown sugar and cinnamon. Arrange apple slices over sugar mixture.
Beat eggs slightly in medium bowl. Beat in flour, milk and salt just until mixed. Pour into pie plate over apple slices.
Bake 25 – 30 minutes until puffy and deep golden brown. Invert on a plate. Slice and serve immediately.
